Ingredients
- 500 g asparagus Woody ends removed asparagus stalks
- 3 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tsp. salt (kosher)
- 1 tsp. black pepper, freshly cracked
- 1 1/4 cup mozzarella cheese, shredded
Instructions
Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius). Using nonstick cooking oil spray, lightly coat a baking sheet.
Arrange asparagus in a single layer on a baking sheet. Remove from the equation.
Combine olive oil, garlic, salt, and pepper in a small bowl. Toss the asparagus with the oil mixture to evenly coat it.
Bake for 10-15 minutes, or until the vegetables are bright and soft.
Remove from the oven and sprinkle the mozzarella cheese on top. Return to the oven and broil (or grill) the cheese until it melts and becomes brown (about 4-5 minutes).

Notes
a) Trimmed Asparagus - The traditional method for determining how much asparagus to trim is to grasp each end and press until it snaps. However, I believe that this removes more than is required. Simply line up the asparagus and trim if it seems to be white or woody.
b) Asparagus Size - Look for medium-sized asparagus (not the super-thick, super-short asparagus or 'fine asparagus'). Either of these options is OK; simply adjust the baking time accordingly. I love my asparagus to have a bit of a bite to it, but if you want softer asparagus, bake it for a few minutes longer.
c) Garlic - This dish is enhanced by the addition of garlic. If you don't like garlic, decrease the amount to one clove.
d) Salt - I'd start with 1/4 teaspoon because parmesan cheese may be rather salty. If you think it requires more near the conclusion, make the necessary adjustments.
