It isn’t going to get any better. Carrots may be peeled or left unpeeled, depending on personal preference. Carrots don’t need to be peeled as long as they’ve been cleaned and scrubbed clean of all debris. The flavor of peeled roasted carrots is our favorite. For a quicker roasting time, trim the ends and then cut them in half.
Drizzle HALF of the sauce on top. This is where you’ll find the key to extracting the most flavor from your roasted carrots! After roasting, drizzle the remaining sauce over them and you’ll have incredible flavors all over these carrots!

When you bake two sheet pans (or a double batch), the carrots produce too much moisture and end up steaming rather than roasting. 2 pound carrots, sliced diagonally into 2 to 3-inch chunks
5 teaspoons unsalted butter
4 minced garlic cloves
salt (1/4 teaspoon)
For garnish, 1/4 teaspoon freshly ground pepper, chopped fresh parsley
Preheat the oven to 425 degrees Fahrenheit. Place aside a baking sheet that has been greased with cooking oil. Set aside the carrots after cutting them up. In a big nonstick skillet or tray, melt butter over medium heat. Cook, stirring constantly, for 3 minutes, or until garlic is lightly browned. DO NOT Roast THE ONION OR THE GARLIC. In a mixing dish, toss the carrots with the garlic butter, or toss them in the pan. Toss before it is well mixed. Place carrots on a baking sheet that has been previously prepared. Arrange carrots in a single layer and bake for 22 to 30 minutes, or until tender. Remove the dish from the oven and place it on a serving tray. Season to taste and make the further adjustments. Garnish with sliced new parsley. Serve the food.
