Refrigeration

If you don’t want to prepare it right away, artichoke should be refrigerated right away to keep its quality. Here are two simple methods for storing artichokes in the refrigerator:

  1. Wrapped in a plastic bag, artichoke is refrigerated.
  2. Trim the stem to approximately a half-inch length.
  3. Keep the stem moist by sprinkling it with water. You can use a spray bottle if you want to avoid getting it wet.
  4. Place it in a plastic bag and seal it. This aids in the trapping of moisture, keeping it moisturized throughout.
  5. Place it in the refrigerator’s crisper drawer.
  6. Artichoke may be kept fresh in the fridge for up to 2-3 days if properly preserved.

  8. Fill a basin with 1 inch of water.
  9. Remove half an inch of the stalk’s end. The freshly exposed end allows the stem to quickly absorb water, keeping the entire artichoke fresh for a long time.

Freezing

By slowing down the enzymatic process that causes food degradation over time, freezing extends the shelflife of the artichoke. However, blanching it beforehand to keep its flavor and color before freezing is required. Artichoke that has been properly frozen will keep its quality for up to 6-8 months.

Here’s how you do it:

  • Remove all of the green leaves to expose the meaty center ( heart ).
  • Remove any dirt off the hearts by rinsing them under running water.
  • Remove the top green portion as well as the stalk.
  • To keep them from becoming brown, soak them in lemon water.
  • Fill a saucepan halfway with water, add the lemon juice, and bring to a boil.
  • Drain and immerse in boiling water. The length of your blanching time will be determined by the size of your hearts. Small hearts should be blanched for 5 minutes, while giant hearts should be blanched for 10 minutes.
  • To stop the cooking process, immerse the hearts in ice-cold water. It’s best to soak them in cold water for the same amount of time they were in boiling water.
  • Place them face down on a towel to dry thoroughly.
  • Take off the choke. Although many people remove it before blanching, I find that removing it at this stage is considerably easier. Simply take a spoon and scoop out the choking.
  • The flash freezes. Place them in a single layer on a baking pan, ensuring sure they don’t touch, and place them in the freezer until totally frozen.

  • Seal tightly, being sure to eliminate all air from the interior to avoid freezer burns.
  • To minimize over-storage, carefully label each bag.
  • Place them in the freezer for a few minutes.

How to choose a fresh artichoke?

When shopping for artichokes at the supermarket, choose one that sticks out in terms of freshness. If you want to preserve it for a few of days, the fresher it is, the sweeter it is, and the longer its shelf-life.

When buying for artichokes, keep the following in mind:

  1. That which appears to be weighty for its small.
  2. Green leaves that are tightly packed.
  3. Because of their sharpness, the leaves squeal when lightly pressed.
